Wild yellow croaker — one of the most prized fish on the Chinese table, and increasingly hard to come by. The flesh is exceptionally tender and faintly sweet, with a texture closer to custard than to firm white fish. It is a banquet fish, and it is treated as one.

Serving Suggestions

• Steamed whole — the traditional treatment, and the one that shows the fish off best. Ginger, shallot, hot oil, light soy. Do not overcook it.

• Braised in a light soy and rice wine sauce.

• Salt-baked or lightly fried for a crisp skin.
